Mrs. Kessler's Science classes conducted a maple syrup taste test. SMS has a maple tree behind the school. Mrs. Kessler drilled a hole into the tree during late winter/early spring and inserted a tap to collect the sap. The sap runs when the temperature fluctuates between the freezing nights and the above-freezing days. Ten gallons of sap was boiled down into about a quart of syrup. Students tasted 3 different types of maple syrup. This year the color was similar between the 3 samples, but the sugar free store brand with added maple flavor was the students' favorite. Students preferred a thicker syrup with a lot of maple flavor.
